veggie cakes with creamy dill sauce + onion bread
(recipes from 'rawvolution' by matt amsden)
RAWvolution's famous onion bread:
3 large yellow onions, peeled + sliced in food processor
3/4 cup flax seed, ground in vita mix
3/4 cup raw sunflower seeds, ground in vita mix
1/2 cup nama shoyu
1/3 cup olive oil
mix ingredients in bowl until thoroughly combined.
spread 2 cups of mixture evenly on teflex lined dehydrator tray.
repeat until all mixture is used.
dehydrate at 100 F for 24 hours.
flip bread onto another tray and peel away teflex.
return to dehydrator for another 12 hours.
cut into pieces.
veggie cakes:
2 cups raw sunflower seeds, finely ground in vita mix
4 stalks celery, chopped
1/2 bunch scallions, chopped
1 1/2 t dulse flakes
6 T meyer lemon juice
1/4 cup olive oil
1/4 cup nama shoyu
1/2 beet, grated
2 cloves garlic, peeled
combine sunflower seeds, celery, scallions + dulse flakes in bowl + mix thoroughly.
combine remaining ingredients in vita mix + blend until smooth.
combine dry ingredients in bowl with beet mixture + mix well.
form into patties 3/4" thick by 2 3/4" diameter.
dehydrate at 100 F for 32 hours.
creamy dill sauce:
3/4 cup young thai coconut water
3 cloves garlic, peeled
1/3 cup meyer lemon juice
1/2 t pink himalayan salt
1/2 cup raw macadamia nuts
1/2 cup raw cashews
1 bunch dill with stems
combine all ingredients in vita mix.
