snack



















stack of coconut lime cookies + brazil nuts

coconut lime cookies:
(modified from 'living raw food' by sarma melngailis)

2 cups macadamia nuts
1 cup shredded dried coconut
1 T lime zest
1 t pink himalayan salt
1/4 cup coconut nectar
2 T fresh lime juice
2 t vanilla extract

chill macadamia nuts in freezer for a few minutes.
pulse nuts, coconut + lime zest in food processor until slightly chunky.
don't over process or mixture will become oily. (chilling helps prevent this.)
transfer to bowl and mix with remaining ingredients.
form cookies on teflex trays and dehydrate for up to 24 hours.
