dinner





















endive, radicchio + apple salad:
2 T shallots, minced
4 T apple cider vinegar
1/2 t pink himalayan salt
1/2 t black pepper
2 T olive oil
2 large pink lady apples, grated
2 heads belgian endive, chopped
1 head radicchio, chopped
2 T chopped italian parsley

whisk shallots, vinegar, salt, pepper + olive oil.
toss with grated apples. cover + chill.
toss apples with endive, radicchio + parsley.
