1 bunch celery with leaves
1 large cucumber with peel (unwaxed)
1 lemon, peeled

run all ingredients through juicer.
strain to remove any remaining fine pulp.

1/2 pineapple
1 beet
4 beet green leaves
6 strawberries with greens
2" knob of ginger
1 large cucumber with peel (unwaxed)

run all ingredients through juicer.
strain to remove any remaining fine pulp.
stir in 1/2 t MSM crystals.

lemon juice
extra-virgin olive oil
pink himalayan salt

best smoothie:
(modified from 'everyday raw' by matthew kenney)

1/2 pineapple
1/2 cup young thai coconut
3/4 cup coconut water
handful apple mint
handful sorrel
3 T chia gel
1/2 t vanilla extract
pinch pink himalayan salt

combine all ingredients in vita mix.

soft tacos with salsa fresca

walnut taco filling:
(recipe from 'rawvolution' by matt amsden)

1 1/2 cups raw walnuts, ground in food processor
1 1/2 t ground cumin
3/4 t ground coriander
2 T nama shoyu

combine walnuts, cumin + coriander.
add nama shoyu + mix well.

soft taco 'shell':
romaine heart leaf

salsa fresca:
1 cup cherry tomatoes, diced
1/3 cup sweet onion diced
2 green onions, sliced
1 T cilantro, chopped
juice of 1/2 lemon
1 t extra-virgin olive oil
1/4 t pink himalayan salt

*the texture of these nuts is amazing - they really do melt in your mouth!
